Frantic Fruit Ring Cake


100g caster sugar

100g self raising flour

100g soft butter

2 eggs

vanilla essence

4 tbsp jam

Fresh fruit of choice



Take a mixing bowl and put in the eggs and sugar and mix until light and fluffy. Then take another mixing bowl and mix the flour and butter until the mixture comes together but is also like breadcrumbs. Then add the vanilla essence into the egg and sugar mixture. Grease the ring tin well with oil and flour. Make sure to preheat the over to 190 degrees Celsius or gas mark 6. Combine the two mixtures, mixing them well together making sure there are no lumps. After the mixture is smooth, put it into the tin taking care not to fill it too much. Bake for 25-30 minutes checking if it golden brown. Then take out and leave to cool. After it is coo, take your fruit and start filling it up from the middle or decorate how you want to. Take your jam and pour into a saucepan, adding a little bit of water to make it thinner and easier to drizzle. After it is watered down, drizzle over the cake to keep it moist and more flavoursome.
